Discover the best of Japanese-Peruvian cuisine in an electric atmosphere and vibrant space. Celebrating the best of authentic and innovative Nikkei cuisine, Chotto Matte restaurants are set in stylish and contemporary architectural spaces, in the world’s most inspirational cities.
Created in 2013 by Founder and Owner Kurt Zdesar, the concept continues to evolve, and push the boundaries and vision of the restaurant scene. After gaining notable knowledge in multiple successful hospitality ventures, Kurt Zdesar envisioned and brought the Chotto Matte concept to life.
Determined to create a new, exciting, and accessible fine dining experience, Zdesar started a journey taking him from Japan to Peru. After meeting with local Chefs and learning traditional techniques, he set his heart on Nikkei cuisine.
